When cooking corn beef brisket in a crock pot - don't the vegetables get soggy if you put them in too soon.?

I am looking for a good corn beef brisket recipe for the crock pot. Most of what I've seen tells you to put the vegetables in at the same time as the meat and cook for anywhere from 7 - 12 hours. First - how long do I cook it so the meat doesn't dry out and second - don't the vegetables get to soggy being in there for so long? Thanks.
